When I first learned 2/1, I was taught that opener's 2NT rebid (after a GF 2/1) showed 12-14 or 18+, whereas a 3NT rebid showed 15-17.
However, I currently play that all balanced hands with a 5-card major in range (14-16 in my case, rather than 15-17) open 1NT systematically.
Given that, what would you propose using the 3NT rebid for?

I play it as an OK scattered min with a 6-card solid major.

I like 2N as a flawed call that might be interested in other strains. 3N is the same range but 5332 is certain with positional stops in the unbids.

3NT = balanced <14 with doubleton heart.
2NT = unbalanced <14 or any 17+ with nothing better to say.

1NT holds all 15-17 5332 hands so 3NT not needed for these. Would never open 1NT on 5=4=2=2 nor would I rebid 3NT on that shape after partners 2/1 response.
1M-2Y-3M shows 6+ cards and 15-17. Let M be any suit quality up to one loser.
1M-2Y-3NT can now show 6+ solid M in a hand just short of a J/S (15-17). Cue bidding follows.

Play 3NT still 15-17 but showing a six card major with stoppers in unbid suit. These hands are not easy to describe. 3NT is often a very good spot, particularly at matchpoints. Sometimes the bid is a good foundation for slam.
Play 1M-2X-3M as solid or possibly semi-solid suit.
