1. Double, followed by 1NT. This hand is just too good for a 1 bid in my book.

2. Pass. I feel no special desire to play 3NT with no spade stopper. It's possible I will get the chance to bid later depending on how the auction proceeds.

2. Pass. But 1NT is not horrible.

1. Starting with a double is clear. We have 21 HCP, it's just too much to not start with a double. We can still have a game when the opponents open and respond, believe it or not. After the 1S response from partner we have the option of bidding 1N or 2H. I would choose 2H because I feel like our most likely game is 4H and I want partner to feel encouraged to bid that. Of course if I play in 2H opposite a stiff I will regret my choice.

2. I would just pass but red/white is the only vul where I would strongly consider bidding 1N.

edit: leaving this up as a good example of self ownage.

Juniors, pffff .... When I was young we only drank buttermilk during bridge events. Maybe a cup of tea or chocolate milk afterwards if we won.

I like Helenes ideas.

Bid 1 Heart on the second one. If they don´t accept your bid, bid 1 NT, banning pd from a horrible 3 NT contract.
If they accept your bid, sell out on their 1 NT and beat them because they may get a wrong idea about your shape.
However this is not possible at BBO, there I would just pass.

In Nr. 1 there are about 42 HCPS in my hand, so I will pass, I play pass to show 41+ HCP or 0-10. This may be encrypted and forbidden, but so far it works well for me. So far pd always knew whether my pass was weak or strong.
With about 18 HCPs I had bid my longest suit, which happens to be Hearts.

#1 Either 1H or 1NT (assuming 1 NT is natural),
I most likely go with 1H, but could understand
1NT.
If I bid 1H, I will most likely pass, if the bidding
comes back to me, but I have only water flowing
through my veins.

#2 X, the add. strength is compensation enough,
and I will pass a min. response from partner.
